Try this delicious recipe for a decidedly indulgent dessert, crammed with age defying goji berries.
– 3 ounces of organic goji berries
– 3 ounces of organic raisins
– ½ cup of organic brown rice
– 1 cup of water
– 3 cups of almond milk
– ½ cup of organic honey
– 9 free range eggs
– 1 vanilla pod (finely ground)
– 1 teaspoon of Himalayan pink salt
– 1 teaspoon of cinnamon powder
Place the water in a large pot and bring to the boil. Then add the brown rice and some Himalayan salt to taste. Reduce the heat, cover and simmer for around 15-20 minutes. Stir in the almond milk and the organic honey. Cover again and cook on a low heat for 1 hour or until the mixture resembles a porridge. Next whip the eggs, mix in the ground vanilla and slowly add the warm rice mixture. Blend until smooth, return to the pot and cook for a further 2 minutes or until nice and thick. Add the goji berries and raisins, mix once more and remove from the heat. Now divide your mixture into 6 dessert dishes and chill in the refrigerator, preferably overnight. Finally serve with a liberal sprinkling of goji berries and cinnamon powder and enjoy!
