Summer Beauty Foods: Best Raw Gazpacho Recipe

After an absolutely wonderful weekend in Paris, I returned bearing more than what I left with –  in terms of my suitcase’s contents, the size of my heart and the space in my stomach. The new treasures are among many – and I can’t wait to start sharing them with you. Rest assured, after my tests and trials, you will hear all about the winners.

Today is just a quick welcome back post from me to you, to give you something quick, easy, beauty-enhancing and delicious: Raw Gazpacho

As summer creeps even closer, the warm soup days are over – thank goodness for soup lovers that the Spanish invented Gazpacho!

Raw Gazpacho Recipe

Place the following ingredients in a blender and, well, blend it.

  • 10 Medium Organic Tomatoes (or add some cherry tomatoes too and sweeten it up)
  • 1/2 Organic Cucumber
  • 1/2 Organic Red Bell Pepper
  • 1/2 an Avocado
  • 1-2 Cloves of Organic Garlic
  • 2-3 Tbs Organic Extra Virgin Olive Oil
  • 1/8 Tsp Cayenne Pepper
  • Pinch of Salt and Pepper

After you’ve completed that, set the soup in the fridge for a couple hours and garnish before you chow down.

Garnish it with some diced cucumbers, basil leaves, pepper or some extra spices of your choosing (hey, throw on a little flax or some sea weed flakes if you’re feeling risky) and voila, a perfect grab-and-go lunch for a couple days!
