Shamrock Protein Shake

Ice cream, sugar, milk, and mint – the traditional version of this exceptionally creamy shake would never in a million years fly as a healthy smoothie … but that’s not to say that we can’t make a version that does! Meet the Shamrock Protein Shake: a reinvented superfood version of the classic that’s sugar-free, protein-rich, and the kind of treat you can enjoy all year! If you’re a fan of mint ice cream, you’re pretty much guaranteed a mild freak out over this exceptional treat of a blend.

Shamrock Protein Shake

Serves 2

1/3 cup cashews
3 large medjool dates, pitted
2 tablespoons lucuma powder
1 cup unsweetened almond milk
1/4 cup your favorite vanilla protein powder
1/4 cup fresh mint leaves, packed
1/4 teaspoon mint extract
2 teaspoons vanilla extract
big pinch sea salt
2 cups ice
liquid stevia, to taste
liquid chlorophyll, for color (optional)

 

Blend all the ingredients — except the ice, stevia, and chlorophyll — together until smooth and creamy. Add the ice and blend until frosty. Taste for sweetness and add stevia (or preferred sweetener) to boost the flavor to taste fully dessert-like, and blend once more. If using, blend in a dropper-full of chlorophyll to enhance green color. Enjoy immediately.
